- Completely made of stainless steel components. - Very high output capacity despite the low steam pressure and consumption, thanks to the high efficiency of the plate heat exchanger. - The very fast cooking process prevents the sugar inversion process. - Automatic control of the cooking temperature. - A long exposure of the boiled product to vacuum, even at high output rates, is ensured by the two independent vacuum chambers. - Enables the addition of heat sensitive ingredients (colors, flavors, milk) directly into the flash-off chamber, after the cooking stage, thus preventing their degradation.
